In mid-February 2021, we opened the fourth branch of the Samurai restaurant under the name URAMAKIYA. We are located in Zurich-Wiedikon near Manesseplatz, in the immediate vicinity of Sihlcity.
We continue with our existing philosophy and are delighted to offer you dishes from Japan. We use rice for our meals that we import directly from Uonuma Prefecture, Niigata. At URAMAKIYA, Japanese hospitality is paramount. You will be served and pampered exclusively by Japanese staff who are true experts in their field. We are confident that you, too, will find the flavors delightful.

WHAT DOES "URAMAKI" MEAN?

Uramaki (Japanese: 裏巻き)

“Uramaki” is also known as an “inside-out roll” or “California roll.”

Literally translated, “Uramaki” means “rolled from the inside.”

 

In this style, ingredients such as fish and vegetables are wrapped directly in the nori sheet, with the rice on the outside of the roll. They are not considered traditional Japanese sushi varieties but were developed, as the name “California Rolls” suggests, by Japanese immigrants in the United States.

The identity of the inventor of the California Roll is disputed. Several Japanese chefs from Los Angeles, as well as a chef from Vancouver, are credited with inventing the dish.


In the 1990s, the boom in Japanese cuisine reached Europe and spread across the globe.

Today, California Rolls are eaten on every continent except Antarctica.

In recent years, sushi culture—often referred to as an art form—has evolved into a tradition forged by the hard work of artisans, embodying the essence of Japanese history and the four seasons.

         

We at Sushi Bar & Café URAMAKIYA aim to create a new category enjoyed worldwide, called “URAMAKI.” We believe that even more people here in Zurich will come to enjoy it, where Japanese sushi culture has crossed the seas and developed in a uniquely global way.
